This posting is older than 6 months and can contain outdated information.
I was not able to find any documentation at sourceforge for DarwiinRemote. Have you tested it? Can you in fact use the accelerometers to control cursor motion?

To answer your question about the IR source, I used 3 high intensity LEDs and a resistor from Radio Shack together with an old mobile phone charging power brick to create a very suitable IR source for the wiimote for <$5 US. You may find this LED circuit calculator useful:
