I have this same issue on my setup, only I work around it by simply closing all windows within EyeTV before switching to iTunes/Front Row/DVD Player, etc. Originally I was just switching apps (with the thought I would just leave all apps open and create a global app switch button similar to Command + Tab) but ran into this issue real quick. If you simply close all EyeTV windows, EyeTV should release the audio to the other apps. At least this is working for me on 10.5.8.
