The one thing that I really wish my default remote control steup could do with iTunes is rate songs. It would be nice to have iTunes play unrated songs while I, from across the room, give them ratings as needed.

How about using the held +/- keys for the rating? They are unused at the moment. Would be great!

In fact a good idea. While this is perfectly possible from a 
developer point of view, I also see the disadvantage with adding hold 
status for the +/- buttons for i.e. increasing/decreasing volume. 
You'd have to click, click, click instead of pressing it once until 
volume fits your needs. Yet, I'll think about it.

Hello Felix,

how about adding a customizable behaviour for the +/- buttons which can be configured in the application preferences? I'm thinking of something like "Enable holding of +/- buttons for additional functionality" [checkbox]

What do you think?

that's a neat idea indeed. I've added it to the Todo list and will 
put it into code as soon as I find the time!
