it would be a nice feature if the time required to recognize a key as "held" could be set by the user. At the moment, the hold time required within iTunes to speak the current playing track is much to long (at least in my opinion).

as far as I can see, hold time is hardware-defined (or defined by 
Apple's driver) for the buttons where it is supported. I see no way 
of changing this. A user specified hold time could be implemented for 
+/- though, yet this is a feature I need to think about some more, 
before I implement it ;-)
