Excessive and jerky Wiimote sensitivity

This posting is older than 6 months and can contain outdated information.
I plugged my Mac on a video projector, and use the Wiimote + Remote Buddy as an alternative mouse on the large 1920x1080 screen. 
My problem is that the mouse pointer reacts to such minute angle variations that it is almost impossible to select a menu entry without multiple cumbersome trials (no, I don't have Parkinson disease... ;-). 
I use a standard Nintendo sensor bar placed 25cm below the bottom of the screen (and about 30cm above the Wiimote when I hold it, 3m away from the screen).

I tried to better calibrate the Wiimote, but the configuration panel accepts only about half the vertical angular deviation I need to cover from the bottom (+10°) to the top (+32°) of the screen.

I was wondering if there was anything I could do to have a more stable and smoother behavior, like build a custom or more powerful sensorbar ? 
I understand from an other post that Remote Buddy already has some "stability algorithm" for the Wiimote, so probably not much hope in that direction...

Or should I switch to Logitech MX Air ? Would it give me a more stable mouse pointer than the Wiimote for menu entries selections ?
