This posting is older than 6 months and can contain outdated information.
Here's a little update:

1) I could reproduce the issue under 10.7.1 on a Mac Mini 2011 and have recorded Bluetooth packet logs of the issue for further inspection by Apple (if necessary).

2) I've installed 10.7.2 on the same Mac Mini 2011 an hour ago - and since then can no longer reproduce the issue. No matter whether the remote is connected when the Mac goes to sleep or not - OS X no longer asks for a PIN code. Under 10.7.2 everything works just as it should.

So from my perspective, the issue in the OS X Bluetooth stack has been fixed by Apple with the OS X 10.7.2 update. If anyone makes a different experience, please don't hesitate to let me know.
